The OP is asking about the prep test, not the real GMAT.
Yes, you *can* skip it, but you shouldn't. The point of practice exams is to simulate real testing conditions. It's a very different experience taking the GMAT with vs. without the essays. Remember that doing the essays requires a whole hour of mental work and concentration before you even begin the quant section. It's a good idea to get in the habit of having to do the essays before the real test begins.
