What does this refer to? Can I get examples?

The stimulus is the passage/paragraph that (usually) precedes the question.
So in the following:
____________________________________________________________
1. All men are mortal. Therefore Socrates is mortal.
Which of the following is an assumption on which the preceding argument depends?
____________________________________________________________
"All men are mortal. Therefore Socrates is mortal" is the stimulus.
"Which of the following is an assumption on which the preceding argument depends?" is the question stem.
