B uses "picking strawberries" as a subject, which is a questionable construction; if you're using the gerund as a noun, it should probably say "the picking of strawberries." I also doubt the use of "that" in "that can be ripened..." since it seems too restrictive. You would probably want to use the comma + which construction there to indicate that it's green bananas in general being described, not a specific kind of green banana.
B is also just really wordy and awkward. Basically, the grammar issues in B are pretty obscure, but even if the grammar seems fine to you (and it's a tough call whether such minor issues would really be considered incorrect on the GMAT), when compared to choice C, it's definitely the less concise and clear of the two options. C has a simple noun as the subject, makes the modification easy to understand, and places "strawberries" near the pronouns referring to it.
Choices A, D, and E all have comparisons that aren't parallel, and can be ruled out for that reason.
