Personally, I'd leave the OG until you're into the middle of your preparation. You should leave yourself enough time to do all of the question and to REVIEW all of the ones that you got wrong, took too long on, guessed on, and even the ones that you got right (to make sure you did them in the best way). You don't want to do the OG problems so far in advance that you forget about their feel by test day.

You could do the older ETS papers on MBA.com's website. Or you could do the flashcards from Manhattan GMAT and from this website.

Save the OG problems for last because I'll get a much getter grasp of it later? Is this your reason? Strategy sounds interesting as some students can run through all the OG problems without recognizing their weaknesses....

Yeah, the flashcards in the resource section.
Save the OG problems for later because that way you get the exact "feel" for them. Manhattan GMAT math questions are good but they don't have the exact same feel. However, you need to have enough time to go over you mistakes until they no longer are a problem.

Kaplan is ok, but probably not the greatest. However, beyond the ETS papers I'm not sure where to point you. I'd just make sure you know the Manhattan SC book really well, and that you start the OGs early enough that you can really spend some time reviewing your answers. Since you have over a year you could probably do some of the OG problems now and then leave them alone for a couple months so that you forget the answers.
