C is rejected because you can't resemble X to Y.
The correct form is X resembles to Y.

here in option C, "resembling" sounds like "egyptians built the sphinx and resembled it to a lion" which is wrong

IMO yes. but grammatically its the only correct option.

a. Resembling both a lion and- egyptians resembled both a lion and man?
b. Building it to resemble both a lion and-correct
c. Resembling it to both a lion and-explained already
d. Having a resemblance to both a lion and-again egyptians had the resemblance??
e. Building it to resemble not only a lion and also- not only "but" also is the correct form

Besides redundant, the choice says "building it", which sounds like an action happening right now (although an Ing verb without a to be verb is either a Gerund or an Adverbial modifier), and the latter sentence says constructed which is in the past.

Can someone please advice on my chain of thought.

X resembles Y - it's an idiom
Eliminate C and use B

IMO B

The first part of the sentence modifies "ancient egyptians." Choices A,C, D modify the Sphinx. That leaves us with B and E. B has the correct idiom.
