By offering friendlier service and a wider variety of cuisines, such as Ethiopian and Vietnamese foods, the new local restaurant has not only taken customers from other restaurants but also forced them to introduce new types of foods to their menus.

We can also go by eliminating B & E, as it violates the idiom "not only.....but also"

From A, C, D.....

Eliminate A for Pronoun ambiguity "them"
Eliminate D for passive voice at the end "have been forced

So C is the final one

C should be correct as them is replaced by restaruants to avoid ambiguity.

(C) is good as it clearly references the other restaurants.

This is a construction is preferred by GMAT.
