It sounds like you've given your whole situation a lot of thought before you begin your studies, which is good.

Before taking your first FULL CAT, it's fine to spend some time familiarizing yourself with the question types and general content/format, but you shouldn't wait too long to establish your 'baseline' score (mid-November should be fine). Taking FULL CATs at regular intervals (1 CAT every 1-2 weeks) is something that you should plan for. You can download 2 free practice CATs (and some additional practice materials from www.mba.com). As far as additional CATs, there are 'blocks' of CATs that can be purchased from GMAC, Kaplan, MGMAT or Veritas.

Your list of study materials is 'book-heavy'; many Test Takers get 'stuck' at a particular scoring level when using that type of approach, so it's possible that you might have to invest in some non-book resources at some point. You don't have to make any decisions about that yet though. While some people use LSAT material during their GMAT studies, I've never been a fan of doing so. The LSAT tests a wider range of concepts and logic in CR (it's actually called LR on that Test) than what you'll see on the GMAT, so you would be learning/practicing for things that you WON'T see on Test Day.
