(B) when sleeping in higher concentrations than waking hours
(C) in higher concentrations during sleeping than waking
(D) in higher concentrations during sleep than during waking hours
(E) in higher concentrations when asleep than when awake

OA is [spoiler](D)[/spoiler]. Why not [spoiler](E)[/spoiler]?

E is incorrect because it uses two dangling modifiers (adjectives) - "asleep" and "awake". Like all adjectives, these must be used close to the noun they modify. Who is asleep/awake? The answer isn't specified within the sentence, so we have a dangling modifier error.

D is correct but an even better sentence would have said:
"is secreted in higher concentrations during sleep than it is during waking hours"

This would've been a better sentence because technically the intent is really to compare two actions. We're not just comparing "sleep" to "waking hours", but rather "how much is the hormone secreted during sleep" to "how much is the hormone secreted during waking hours"
