I have just done my first mock test and finished both verbal and math with 20 minutes to spare. However the questions I guessed, I didn't know how to work out the answer, so more time on those questions would not have been beneficial without having a better knowledge.

Does anyone have a similar issue? Does anyone have any tips on how to pace myself and where it makes sense to spend the extra time checking?

I have the same problem! I also just took my first practice GMAT and had 20 minutes left on each section. I kept rushing through (especially on quant) because I was afraid of spending too much time on any one question. If anyone has any advice on this, I would greatly appreciate it.

This isn't a problem at all! I was pretty quick myself, and on the actual GMAT I finished the quant with 20 mins to spare too. There's nothing to worry about. In fact you can focus on content over speed, so as you correctly identified that there were some questions you just didn't know, you should work towards learning all the concepts covered.

Try and develop an easy pace by practicing more tests. Don't be afraid to spend 3 mins on a tough question - you probably finish the easy problem solving questions in 30-45 seconds anyway!

Stay focused, analyze each test and develop your own strategy. Cheers!
