C. are because of the interaction between two stars that orbit each other

In A and B, likely and may are redundant, since likely -- all on its own -- implies that something MAY be true.
Eliminate A and B.

C: A number of astronomical phenomena...are because of the interaction.
Conveyed meaning:
Because of the interaction, a number of astronomical phenomena are.
These phenomena are WHAT exactly?
The thought is incomplete.
Eliminate C.
Note the following:
is/are/were + because is ALWAYS WRONG.

D: two stars where each is orbiting the other
Here, where seems to refer to two stars.
Conveyed meaning:
WHERE is each star orbiting the other?
AT TWO STARS.
This meaning is nonsensical.
Eliminate D.

The correct answer is E.
