Most of the times... evidence that would be correct...
But also depends on the context..
For e.g. The evidence OF the last night murder is not well founded..
The Winnebago tribe may provide the first evidence THAT the North American Indians have developed advanced full-year calendars

GMAT loves the word "That". GMAT prefers to follow thinking words with "That". Think that, Believe that, Realize that..

You will need that if it is evidence of a verb. eg there is sufficient evidence that the world is round. If you have evidence of a noun then you use evidence of. e.g. this track is evidence of a bear (or you could change it to a verb - this track is evidence that a bear was here). If you use evidence of for a verb then you need the "ing" (evidence of a bear having been here) which the GMAT dislikes so it is unlikely to come up.
