I recommend attending info sessions along with visiting career services for both schools. The concern about Columbia would be that you would not have access to the types of recruiters who are looking to hire associate level consulting or the equivalent-level finance positions. So, be frank with Career Services at both NYU part-time and Columbia EMBA.

NYU Stern does not allow part-time students to participate in the full-time MBA on campus recruiting process. So, I would contact the consulting and finance clubs and ask to speak to current students to see how difficult networking is as a part-time student.

Columbia EMBA students can access Columbia's job posting database. I would ask to see those jobs and determine if those jobs meet your short-term post-MBA roles. Likewise, speak to EMBA students in the respective clubs as you conduct further due diligence on the two programs.
