Due to an obscure technicality in food labeling known as the batter-coating rule, French fries are legally considered fresh vegetables. The batter-coating rule stipulates that any vegetable that has been processed – such as a cucumber that has been waxed or a strawberry that has been sweetened – is still considered fresh as long as it is perishable, and French fries are the result of processing a vegetable.

Finding the assumption which this argument depends on implies that, we want to find the correct answer choice that must true in order for the given argument to be accurate.

Option A - Incorrect
This answer choice goes off point because whether French fries are healthy or unhealthy, are not relevant to this argument.

Option B - Incorrect
This is the same as expressed in option A. This option is also incorrect

Option C - Correct
From the passage, French fries are fresh vegetables which are perishable and it is backed by this batter-coating rule -"the batter-coating rule stipulates that any vegetable that has been processed is still considered fresh as long as it is perishable, and French fries are the result of processing a vegetable." So, therefore, this is the correct answer choice.

Option D - Incorrect
This answer choice is incorrect because French fries are obtained through the processing of a vegetable and not waxed nor sweetened.

Option E - Incorrect
This claim is wrong. It is out of scope and irrelevant to the passage.
