I get why choices A, B and D are incorrect because of faulty comparison but why choice C is incorrect?

This is incorrect because 'Those' here stands for students.

Now keeping this in mind, place the meaning of 'those' in the sentence ...

Unlike students ["those"] of the United States, in which students usually select a major in their sophomore or junior year of college, most of Europe's students

The sentence does not make sense. Unlike Students of the US in which students select...??? WRONG!!!!

those of the United States and most of Europe's students are not parallel.

Students of A is parallel to students of B.

OR

A's students is parallel to B's students.
