Books in European--need clarity for the use of THAT

Books in European libraries last longer than books in libraries in the United States because, although the climate in Europe is fairly humid, libraries there are not subjected to the extremes of temperature and humidity that damage collections in the United States.

A. because, although the climate in Europe is fairly humid, libraries there are not subjected to the extremes of temperature and humidity that

Guys i post this question, only to get clarity for the use of THAT...Look at Op A and please clear my concept..THAT introduces relative clause AGREED and Does it always refer to singular nouns..?? in Op A, THAT is referring to what?? "extremes of temperature and humidity" OR just "temperature and humidity"...?? please clear my concept....thanks

extremes damage collections.. I think that is refering to extremes.

what part of speech is extremes here? Noun???

i guess it refers to the extremes of temp and humidity because that is wht is damaging libraries in US nit just temp and humidity damaging them.

Even i thought the exactly same thing....but now consider this...DAMAGE is VERB and its plural..AGREE??

if THAT refers to "extremes of temp and humidity", which i think it should be then it means THAT is referring to a phrase...and i think a phrase and clause requires a Singular VERB NOT a plural one like here DAMAGE...OA is A

Thanks HSPA...why?? because i think your question clear my doubt.

Guys correct me if m wrong...i think prepositional phrase "of temperature and humidity" acting as adjective modifying or describing EXTREMES..so we can say "that" is referring to EXTREMES...

EXTREMES THAT DAMAGE...sounds awkward as i was getting confused from this thought earlier that how extremes can damage something??? But now i think we can relate this thing with this example

Lions of the Africa that are...bla bla bla..

What you people say???

X of Y that....

Whether that refers to X or Y depends on the context.
1. If the verb agrees with X, that should refer to X.
2. if the verb agrees with Y, that should refer to Y.

Example:

I want the box of pens that is on the table.

==> Here, that refers to box because:
--> is is singular, and box is singular.
--> The box is on the table.

We need the list of animals that exhibit preferences of blah blah.

==> Here, that refer to animals because:

1. exhibit is PLURAL, and animals is plural.
2. It is animals that can exhibit preferences.
3. List cannot exhibit preferences.

Conclusion:

That refers to what depends on the context.

I selected E at first glance as I thought that 'beacause' and 'although' together are senseless.

What's the problem with E?

Pronoun THOSE seems to refer to libraries also thus "libraries that damage collections" incorrect
