The purpose of choosing the 5 schools during the test is that GMAC is giving you the chance to send your scores for free. If you plan on applying to a school outside of the 5 you chose during the test, you will have to pay GMAC to send your official scores to that school (~$15 per school, I think).
So you see, the only point is that this is your chance to send your scores for free to any school. This is only one small aspect of the overall application, which includes fees, essays, LORs, etc., etc.
Does that make more sense?
