Two main things to be noticed:
1. appositive ambiguity
2. parallelism

A--> run on sentence
B--> appositive ambiguity......"involved" could point to "widespread changes"
C--> As gmatmachoman bhai pointed......is the answer
D-->Parallelism issue......the introduction of x and of Y (Y =A+B ).......and the substitution of X for Y ......this is the correct way to see this.
E--> same as D

B. revolution, involved the large-scale introduction of enclosed fields and of new
farming techniques and crops, and
C. revolution, which involved the large-scale introduction of enclosed fields and of new farming techniques and crops, and
D. revolution involved the large-scale introduction of enclosed fields, new farming techniques and crops, and of
E. revolution that involved the large-scale introduction of enclosed fields and new
farming techniques and crops, and of

On the first go I eliminated: A for lack of verb; D & E for no comma after revolution; C for which coming after revolution as if its revolution which involved.

C remained - then looked more deep and found its parallel also - IMO

Hi, A, C and E are all sentence fragments. Only B and D had a proper verb 'involved'. Between B and D, only B is parallel.
