Your course selection really depends on your goals. Are you trying to show that you are capable of handling quant work or are you trying to strengthen a weak area? If you want to show you can handle MBA quant work then I recommend accounting and/or stats classes from a local business school. Otherwise, choose a course that will solidify your quant foundation. Finally, be sure to earn A's (no lower than B's) in the courses you choose.
