"many of them chiseled from solid rock centuries ago" should modify "the mountainous regions".
hence C D n E.

B - ..............many hundreds of ................-awkward construction.

hence IMO A.

many of them chiseled from solid rock centuries ago should modify

monasteries and not the mountainous regions

(A) Many of them chiseled from solid rock centuries ago, the mountainous regions of northern Ethiopia are dotted with hundreds of monasteries. [the part before the comma seems to be modfying mountains not correct]
(B) Chiseled from solid rock centuries ago, the mountainous regions of northern Ethiopia are dotted with many hundreds of monasteries. [chisled from solid rock "the mountanious regions" not correct]
(C) Hundreds of monasteries, many of them chiseled from solid rock centuries ago, are dotting the mountainous regions of northern Ethiopia. [ are dotting looked wrong to me]
(D) The mountainous regions of northern Ethiopia are dotted with hundreds of monasteries, many of which are chiseled from solid rock centuries ago. [ which is not right]
(E) The mountainous regions of northern Ethiopia are dotted with hundreds of monasteries, many of them chiseled from solid rock centuries ago. [them seems to be right]

Let me know if I am doing something wrong

I still haven't taken the exam, but I think that 'D' is correct because "are" is used ("are chiseled from solid rock centuries ago"). The monasteries were chiseled in the past, so I'd use "were" instead of "are", as in "were chiseled from solid rock centuries ago". I don't think there's anything wrong with using "which", as mentioned in a previous post.
