I think if you are able to highlight your leadership skills through the Not For Profit (which is relatively easier to demonstrate), accountabilitity and scale of impact within your work place and reasons for doing an MBA might just do the trick - significant thinking on those lines, career goals, why MBA, why now, illustrations of your leadership skills, how you could bring business thinking to class environment and why would a school select you, in spite of your GMAT score, will be really key to your application. Of course, a higher GMAT score always demonstrates that you are academically ready to take on the rigor of an MBA program. If not, can you demonstrate your academic prowess in any other way? Particularly numerical, analytical, data analysis side?
