You certainly can. INSEAD would be the place to start looking and HEC Paris as well (What can you do? It's a matter of physical location! and those Parisians, boy are they chic).

I know NYU Stern has a concentration in it, as well as a student club,

I recently watched this, you may want to check it out

Innovation Module: The Future of Luxury - put on by some professors at NYU, really interesting watch, opening my mind more and more to the Luxury side of brand management.

ESSEC in France also has a Brand Management program "sponsored" by LVMH - https://www.essec-lvmh-chair.com/
My goal is to make MBA applicants take onus over their process.

Can anybody tell me if it's good to study MBA-luxury brand management or study MBA with luxury brand management as a specialisation?

Thanks
It is a great idea to try and pursue a career in the luxury goods market. It all depends on where you want your career to go. If you are interested in luxury brand management only or in general management. I know a HEC Paris MBA who studied general management but the programme still prepared him for the luxury goods market. He now heads Pandora jewellery's retail operations in Hong Kong.
