Hi,
When we use either X or Y, X and Y should be parallel.
C - works and it will sell them online as either electronic books or as downloadable copies
electronic books is not parallel to 'as downloadable copies'.
E - works, and it will sell them online either as electronic books or downloadable copies
'as electronic books' is not parallel to 'downloadable copies'

it in the underline portion actually refers to The largest trade-book publisher because the preceding it in the non-underline potion (parallelism) refers to The largest trade-book publisher.
