It's a comparison question: what is unlike what? Escarole is unlike 'many winter greens'. None of the answer choices makes the correct comparison besides B.

IMO A.

It is the leaves of Winter Green that require lengthy cooking time.
Similary the leaves of Escarole need a lot of time to cook.

In B, it implies that it implies tht the plant Escarole is being cooked !!!

Even I think the answer should be A, we are comparing leaves of winter greens with leaves of escarole, not leaves of winter green with escarole.

Can someone explain?

No, we are comparing many winter greens that have tough leaves with escarole

In A, the comparison is between many winter greens and the leaves of escarole. You can also eliminate A for a verb issue. Escarole is singular and so we should use the singular verb needs

I'm still not convinced.

We are not cooking winter greens, we are cooking the leaves of winter greens.

In the sentence, the closest noun to 'those' is 'tough leaves', so we are comparing the leaves of winter greens with those of escarole.
Also, 'need' should be plural as we are talking about the leaves of escarole.

Isn't anyone seeing this the way I see it? Or I'm I looking at it in a completely wrong way?

Tough leaves is an adjective. The plural pronoun those here refers to the leaves of escarole and not of winter greens'
In choice A, winter green that has tough leaves is being compared with the leaves of escarole. The comparison is not equal so to speak
