I started prep for GMAT a month ago and on my first ever diag cold i got a 510. After a month of prep from GMAT Review, Powerscore Logical Reasoning Bible and GRE/GMAT Math Review from ARCO i scored a 620 yesterday on the 2nd Test which i gave at a Manhattan GMAT Test Prep Center in NYC. Yesterday i scored 33 on Quant (my weak point) and 41 on Verbal (93rd Percentile). First i would like to know if Manhattan GMAT test are somewhat reflective of the actual GMAT (i felt that way) and second can i achieve a 700 on May 19 - the day of my GMAT ??? Thanks.

with practise and good study strategy i think 700 is achievable for you.

It's possible, but it will be tough--you've got a lot of room to improve with quant.
The way to do it is lots of practice and systematically identifying/improving upon your weaknesses in quant--there are some great resources on the GMAT Resource Wiki to help you with this: https://www.beatthegmat.com/wiki/

Quant has always been my weak point but i am hoping i can improve on it as there is clearly room for improvement. IS it possible if i rock the Verbal and do average or better than average on Quant i hit 700? Do you guys know about the Manhattan Review Math Study Guide and Solution books out there ... should i buy those to brush up my skills, BTW i am preparing on my own. I like our materials, of course, but I'm biased. 
If you score in the 99%ile on verbal (which is in the high 40s - I know the scale goes up to 60, but they don't actually assign those scores for some reason), then your math would have to be around mid to high 60%ile to get a 700. That's assuming you ace the verbal. If you score 90%ile on verbal, then you'd need math %ile in the 80s.
(Note: these are all percentiles, not percentages correct!)
So, yes, your math can lag. But also know that the very top schools are looking for 80%ile in each of the subsections as well as the overall score. If you aren't aiming for a top-10 school, then that's not a concern, but if you are, you should think about that.

Yeh i am looking to get in at a top school so i guess it matters then that i do well on Quant ... its not that i am dumb on the Quant section its just that i take more time than others. I'm in the same boat as you, I think.
I just took my first practice test (probably about 3 hours of prior studying) and received a 590:
Verbal: 10 out of 41 wrong
Quant: 16 out of 37 wrong
I plan on putting in an hour/ day during the week and 4+/day on the weekend, mostly focusing on quant (obviously my weaker area).
I have the Kaplan, PR, and OG books all waiting for me
What do you think? I'm aiming for 700+, closer to 750, by the time I take the exam in a month and a half.
Am I aiming too high? Do I need to put in more hours?
Any advice is appreciated.

Nothing is impossible. If you got a 590 cold then getting a 750 is achievable by focussing on your weak points. Since you are weak in math like me i would recommend you go over the ARCO - GRE/GMAT book which is just amazing as far as basics in Quant are concerned. Most people only focus on the harder questions but you can only learn to tackle those questions once you are very strong on the basics. No matter how good some one is, going through the basics is such a refresher. Just by going over this book i can guarantee you will increase your score by 10-20 points. I know i did. Also since you are doing well on verbal try to further practice on it so that you ace it on the day of the GMAT - a better than average score in quant + a terrific score on verbal can still get you a 700. I am putting in the same amount of hours as you are. I am guessing you work full time. I try to do some math during my lunch hour at work and for an hour or two at night. On weekends i try to put in atleast 4 hours per day. I think your pace is ok...just make sure you stick to it.
