Your profile contours look interesting and it will indeed be prudent to give a FinTech spin to it. However, you will have to ensure that you articulate the business impact of your work well.
Your concern is valid since
MBA after 30 is tricky. This is likely to be a fair bit of hurdle at most regular MBA programs. If you are ok with life/career in India, the ideal fit will be IIMA and C programs.
Internationally, you may want to explore programs in Germany that have a slightly senior cohort.
The GRE will also pose a challenge since the average at good schools is in the 320+ range and for Indians, tends to be much higher. So, push really hard on that aspect.
