GMATprep tests are the closest thing to the real deal - they are developed by the creators of the GMAT. Most people say that Manhattan GMAT tests are also pretty good. I've also used Kaplan and liked them, although the verbal questions are not exactly GMAT-style.
800score tests are not worth your time, IMHO. As far as I can recall, they were not even adaptive and the scoring was totally off.

It really depends on your preferences. Kaplan is different, that's all I'm saying: their quant is much more straightforward, no complicated word problems, while on the real test I saw quite a few. Verbal is, as I've said, not as clear cut as GMAT verbal.
Most people usually score lower in Kaplan than they do in the real thing. This was not exactly the case for me, however: I even managed to get an 800 in a Kaplan test.
