Was wondering if anyone knew of non-MBA programs (and similarly programs not specifically tailored to business) that accept the GMAT score in lieu of the GRE or other test.

Most non-MBA schools don't accept GMAT.

You're porbably better off taking the GRE. If the program accepts the GMAT it's probably not a program you want to attend.
