My motto is: Content first, speed second.
I highly recommend that you don't worry about timing until later in your studies (Day 43 to be precise). Having said that, it's not a bad idea to time yourself while doing practice question, but do so solely for the purpose of getting a good idea of what 2 minutes feels like.

I agree with Brent. Your practice should be clearly divided into two categories. The first category will be for practicing questions in order to build and reinforce key concepts and strategies, the second being practicing gmat like questions to test your current scope of knowledge. It is extremely important, that you "take your time" with the first category as good quality time here would much shorter prep overall (no need to re do concepts that you have covered the first time)..The second category should be timed.
