I have heard that since student visa is valid only till 1 year after completion of MBA in US, gettimg a job offer is quite difficult for international students even from top 20 schools due to the uncertainty over receipt of H1B VISA. In such cases wherein someone does not get an H1B, what are the other option or workarounds for someone who wants to work in US? How easy or difficult it is to find/convince an employer to post a candidate in say Europe/Canada and keep trying for H1B in successive years? Also approx what percent jobs available in the market are open for international students?(requiring visa sponsorship)

There's no easy answer here, I'm afraid... a lot will depend on you, on your goals, on your school, on how well you network.
The ultimate answer is that: the better school you go to, and the better you are at networking the more success you will have.
