Veritas CAT Score

I took the six Veritas CAT exams last September (2014) and consistently scored between 720-740.

I then took two Veritas CAT this week and scored a 650 and 630.

As much as it sounds like I am in denial, I am fairly confident that I am just as well versed now that I was last September (if anything, I feel more comfortable with the materials now than I did in the past when I was studying).

Has the scoring been re-calibrated since September 2014?

While those CATs could have been 'adjusted' since you last took them, it's dicey logic to assume that all other factors are the same as they were 11 months ago.

Have you had a chance to do a full review of these 2 CATs? Can you define WHY you got questions wrong (and how many were due to silly/little mistakes?)?

Here are some other factors to consider:
1) Whether you took the FULL CAT (including the Essay and IR sections) or not.
2) The time of day and day of the week that you took these CATs.
3) The 'physical' details of the testing 'event.'
4) Your mental state (restfulness, calm, fatigue, etc.).
Etc.

Since you were consistently scoring in that range last year, did you end up taking the Official GMAT? If so, then how did you score?

My guess is that you made some careless errors on the new exams. This happens when you haven't touched material for quite sometime - it's easy to overlook things. Consistently studying will all you to stay sharp on the subtle variations in questions.

It's also important to remember that test takers often see their scores vary +/- 30 WITHOUT a large gap between attempts. With that in mind, your current baseline isn't too alarming, considering it's been close to a year since you last took a practice exam. Take some time to review your most recent practice exams and identify trends and patterns in your habits. You'll identify where you really need to brush up after taking the time you did between September and now.
