I was just concerned that do the schools prefer someone who has taken the GMAT test recently or they are just happy to see the score valid (as it is for 5 years)?

They don't really care to be honest, unless you're an older candidate, in which case it's a more recent data point. But even then, it's marginal preference at best.

No difference whatsoever. The only way it would matter is if you took the test now and for some reason delayed going to MBA school beyond the 5-year mark. Then you would need to retake the test.
