"We have THREE TIMES AS MANY pears AS you", is this sentence is correct? I've my doubt because no. of pears are counted against a person, You.
I'm no expert, just trying to work on my skills. If I've made any mistakes please bear with me.

Yes this is the right construction. its not comparing number of pears with a person, rather comparing the number of pears the two groups have.

I believe that it should be: We have two times as many pears as you do.

This would make the sentence perfectly parallel so there's no mistaking what is compared.
