abilty to adjust is correct idiom, so A out.

The coyte is singular, requiring it, so B is out.

Out of CDE, D contains infamosu being, so out. to be able to is not correct construction, so C is out. IMO E.

Can somebody explain how what is correct among them... and why

I will go with E....

they / it ..... the pronoun should refer to the mouse .... so it is the right pronoun here.
