Community involvement is definitely a case of quality over quantity. There is no set amount of involvement that admissions is looking for, rather a cohesive pattern of involvement reflects well on a candidate.
Community involvement shows that the applicant takes initiative to seek out opportunities for growth even outside of work, that the applicant cares about other people and is interested in being part of a community, and can often demonstrate leadership and teamwork above and beyond the opportunities at work. For instance, applicants who have led organizations outside of work can show management potential even if their job does not allow them to lead teams.
