"In her book illustrations" is providing additional detail about how she capitalized on her keen observations. "Carefully coordinating them " modifies Beatrix Potter (she is the one who was coordinating), but the "them" is a problem. It's awkward and quite possibly wrong to use a pronoun in one non-relative-clause modifying phrase to refer to a noun in another such phrase: "With the pizzas, eating them in a hurry, the students made up for a 24-hour fast."

carefully coordinating them with her narratives modifies book illustrations. This doesn't make sense since Beatrix Potter, not the illustrations, actually co-ordinated.
