Choreographer George Balanchine founded the School of American Ballet, which enrolled many famous dancers, that included Mikhail Baryshnikov and Suzanne Farrell.

versus

Choreographer George Balanchine founded the School of American Ballet, which enrolled many famous dancers, including Mikhail Baryshnikov and Suzanne Farrell.

Which one is correct? and why?

between the two, the latter is right.

"that" should follow immediately the noun it modifies without a comma.
