A) Jimmy, who ate sardines from the officer's mess, became quite ill.

B) Jimmy, that ate sardines from the officers mess, became quite ill.

C) Jimmy that ate sardines from the officer's mess became quite ill.

D) Jimmy, who has eaten sardines from the officers mess, became quite ill.

E) Jimmy who has eaten sardines from the officer's mess became quite ill.
The GMAT is indeed adaptable. Whenever I answer RC, it proficiently 'adapts' itself to mark my 'right' answer 'wrong'.

Whats happening here?

Jimmy ate the sardines and then he fell ill.
Eating happened before falling ill.

So we should use simple past tense, because the action of eating got over.

So 'ate' wins over 'has eaten', choose A.

Plus B and C use 'that' to refer to Jimmy. Use 'who' to refer to people.
