Which are the most desiable extracurricular activities that a university would like to read on the resume of a applicant?

There are no preferred or desirable extracurricular activities. Schools are not as concerned with what you do as much as that you have a life outside of work. Ideally, you will want to have involvement in the activity for a good length of time and possibly have a leadership role (whether for the overall organization or leading a project/initiative).
