what is this structure ' more of a kind of fat ' mean?

The OA reads as follows:

Wild animals have less total fat than livestock fed on grain [have total fat] and more of a kind of fat thought to be good for cardiac health [than livestock fed on grain have a kind of fat thought to be good for cardiac health].
Tbe words in brackets are omitted but implied.

The portion in blue conveys the following meaning:
A particular kind of fat is thought to be good for cardiac health.
Wild animals have more of this fat than do livestock fed on grain.
