I also got stuck b\w B and C and I chose C over B because B introduces a non essential modifier and if we take out the non essential modifier then crux of the sentence should not get distorted,whereas in this case we need a modifier that explains the revolution.So ,verb-ed modifier directly modifies the noun before the comma and describes the agrarian revolution.
Please point out if there is a flaw in my reasoning.

In {C}, Verb is missing

RED = Appositive
BLUE = Non-essential Part

If we remove both, we get

widespread changes in agriculture and the substitution of commercial for subsistence farming.
No Verb.
