Can someone provide greater insight on how Adcoms view certain companies? For example, will an applicant be better served with three years experience with CITI or three years with Raymond James? Is working as a M&A analyst more impressive than as an Operations Management analyst, or visa versa?

I feel as though a general ranking of companies in the eyes of admissions would be very useful. Also, if anyone could answer my specific question regarding CITI and Raymond James, it would be greatly appreciated.

Can't really comment on these specific companies but with millions of companies around I am sure adcoms are not keeping detailed ranking docs with them. Your previous professional background, in term of your exact roles and responsibilities must tie very well with your future goals. Role and responsibility you had within the company would definitely score at parity with the type of company you were in, if not above.
