simple past or past perfect

I don't think use of past perfect is required here. We use past tense when we want to establish a chronology of related events and remove any ambiguity regarding their occurrence. Obviously George will write a book about the places he visited only after visiting those places, so the order of events is clear -> first visit places then write book.

So C looks good.
