what is "one" here refering to? is it refering to a distant supernova explosion?

yes "one" is referring to the explosion. The correct answer has to be E.

so "that" is redundant in all other 4 options.

yes, "that" is redundant because we know "one" is clearly referring to the explosion. So inclusion of "that" makes it redundant.
