How far above or below the average GMAT scores in the rankings for schools should I shoot for? I want to apply for the MBA at Minnesota Carlson school and their average score is 641, so would I have a chance with a 600?

You want to be as close to the average as possible and definitely in the mid-50% range. You should be able to find on either the Carlson site or other publications what the mid-50% range is for the GMAT. If you are outside this range, then you might consider retaking the test to get your score up to make your application more competitive. It is not that you could not be admitted with a 600, but it would help your case to be closer to the average.
