Well, you gotta see how that GMAT pans out for you. But if you get a 710, you could apply to any program. Okay, you wouldn't necessarily get in everywhere, but given a nice mix, you should do well.
Your vast international experience, your unique industry and your leadership makes you a very good candidate.

If you are looking for Entrepreneurship, then Columbia, Wharton, NYU, Anderson are good choices.
Non Profit - Harvard, Yale, Stanford, Ross, Haas and Kellogg.

Of course for general management/consulting you could apply anywhere.

Basically, I think the best thing for you to do is come up with a short-list (based on what you know, location, research, etc.) and I can give you some pointers, because your goals are vast. But overall you should come up with a nice mix of 5-8 schools in which one or two would be "safe schools" one or two would be "killer dreams" and one of two would be "competitive"

As for LBS - kickass school, very finance oriented, although strong with consulting too. Along with INSEAD and IE, one of the top euro-programs.

Assuming a 700 GMAT you are competitive for Top 10 schools. Considering entrepreneurship and non-profit are strengths of Yale SOM the program should be one the schools you investigate more. You also might want to reach towards Kellogg which has a SEEK program that might interest you. (https://www.kellogg.northwestern.edu/academic/seek/)

Assuming you get the GMAT score you surmise, I would say that some of the schools suggested to you could definitely be on your list. But I would encourage you to go deeper in the rankings to improve your chances of an acceptance. Though respectable, nothing yet jumps out as an above average "hook" if you will for a top 10 school. Yes your work in the refugee camps is very admirable, and could get you noticed, but I would still be looking for something else from work or school that pops. Now of course, I don't know everything about your background, and surely the essays are a great place to win hearts and minds. So my suggestion is to look at some other schools in the rankings that would value your engineering background, like a Cornell or a Darden.
