My last three weeks of practice test are as follows

MGMAT 700
MGMAT 720
GMAT Prep 700

What would be the best use of my time during these last two weeks?

Looks like you're in very strong shape prior to your GMAT! Two articles/posts I want to direct your attention to, since they are related to your question: At a high level, my advice would be to begin to wind down your prep. I'm not a believer of studying full force right up until you take the test. The GMAT is, surprisingly, a physically-demanding test. Sitting and focusing for 4 hours takes a lot of energy, so be sure you get a lot of rest. The day before your GMAT don't do any studying.
