Many schools have you self-report your GMAT score. They claim that they verify your self-reported score with your official score only after you have been admitted. If their claim is true, they won't even know how many times you've taken it until after you've already been admitted.

But I think generally speaking, it depends on the school you're applying to. I've heard some school taking an average of all your attempts, though most of the schools consider the latest score.

Many, many people take the GMAT more than once, and twice is quite typical. I wouldn't be concerned about multiple attempts until you are approaching the 4-5 times range or if preparing for the GMAT is taking away time from essays and other important parts of the application.
