With less than a month to go before your test date of January 10th, you might be hard pressed to find a short-duration (e.g. weekend) GMAT test prep offering - especially in light of the holidays. Having said that, I know that many of the prep companies offer single-day sessions or 1-2 week boot camps, so your best bet will likely be reaching out to firms like Manhattan GMAT, Kaplan and Veritas to investigate what they've got on offer in Houston.
Since these firms may not offer much in the way of formal classes or boot camps during the holidays, you may also want to consider hiring one of their tutors for a full weekend of dedicated work - to simulate a boot camp of sorts.
As a final note, I think that it absolutely makes sense for you to continue prepping/refreshing if your Princeton Review course ended back in August - as it is very likely that you've built up some rust since the course ended. Be sure to try doing some timed, full-length practice tests (ideally one per week for the next 3-4 weeks) and make sure they aren't just Princeton Review tests - since you want to expand your exposure to new questions (and since Princeton Review's GMAT questions tend to track a bit easier than the real exam).
