IMO A....

removing the which enrolled... part(the not so required part of the sentence):

Choreographer George Balanchine founded the School of American Ballet that included Mikhail Baryshnikov and Suzanne Farrell.

which enrolled... is just an additional information which can be negated without influencing the sentence.

In B, some conjunction is required instead of comma before enrolled

In D & E, that & who are put up in place where which is required

At first go C looks good...but if v remove the middle modifier, the sentence looks awkward...otherwise, it wld have been better if such as be placed instead of ,including

OA plz...

Answer is C. Only question I have, is the reason A is wrong is because "that" cannot modify dancers. I did not understand that explanation?

Actually "That" can never refer to people. The appropriate relative pronoun should be "Who". This is what makes A incorrect

that cannot refer to people, however that can refer to a group.
C is the best---in GMATLand many answers would sound correct, but go for the Best one... in this case the use of participle is best, as it is modifying the entire previous clause.
