I have Kaplan Math review and I want to strengthen myself in Probability topic. I was flipping through the books yesterday and I could not find a section for probability. Am I missing something here...

No, you're not missing anything. I think their coverage of probabilities is pretty limited (I believe it's at the end of the Arithmetic chapter, although I'm not 100% sure since I don't have the book at hand). Check out this book review.

The Math Review covers probabilities basically, but they are covered in more depth in our Premier and Advanced books.
